Leftover, dry chicken- what to do?
I overcooked "beer in the butt" chicken, and need something to do with the meat.
I'm not a big fan of chicken salad, but if you've got a creative recipe for it, I'd give it a try.
Also thinking maybe there's a beans and rice dish, or chili, I could make with it.
Eggs and shredded/diced chicken omelette? Refried beans and rice and chicken burrito?
Whaddya all think?

Alright Paul, all you need is ze chicken, ze chicken stock/broth, ze flour, ze milk, ze peas and ze carrots (in a can, frozen, any which way), ze butter, ze eggs and ze puff pastry dough.
Saute the veg in the butter, then stir in a little bit of flour to make a roux. Cook it for a wee little bit, then add in your chicken stock and milk. Once it comes to a boil it sould be thick, if too thick, add more milk and cream. Now is the time to add seasoning, salt, pepper, garlic...I always add a little ground sage into chicken pot pie filling. Once it's the right consistency, add in your chicken and let it simmer for about 30 mins to further concentrate the flavors and thicken a bit more.
Once done, pour the mixture into either a pyrex pie pan, or some ramikans and top with your pastry dough. Now, to get the dough brown, just whisk up an egg, then use it to brush on top of the dough, this will ensure proper browning.
Your puff pastry dough should have instructions on how long it needs to rise and brown in the oven. Since the filling is cooked, you just have to bake it till your dough is ready.

Chicken enchilads. Best with flour tortillas and green enchilada and/or tomatillio sauce. Coat the inside of the tortillas with sauce then stuff with your chicken, pepper and whatever mix and roll em up. Jalepenos, Pablano, regular Green or Anaheim peppers are great to use depending on your heat-o-meter. A good chesse mix is colby and mozzerella, with just a bit of large curd cottage cheese.
Spread a little (just a tad to soften) sauce on top (don't want them swimming in sauce), sprinkle top with rest of cheese mix, tent and bake at 350, 35 minutes. Eat and pass out. Good Sunday meal.

well dude do you like barbecue? throw some baked beans in the oven get out your crockpot and have beans and bbqed chicken. here's the sauce :
1 1/2 cup katsup
1 tblsp. mustard
1 tblsp. bbq seasoning
3 tblsp. worcestshire
1/8 cup of sauteed onion
1/2 cup honey
3 tblsp. apple vinegar
sautee the onion then add the rest. bring to boil then simmer for 10 minutes.
this sauce is great and wil keep in a bottle in the fridge for two weeks. enjoy
