View Full Version : Bone in Ham

Bone in Ham is one of my favorite items to make.
Buy a good quality bone in ham and put it in a large deep baking dish with
two cups of water, 1 can of cherry glaze, 1 can of crushed pineapple, 1/4 cup of
brown sugar and one cup of rum. Cook at 325 until internal temp. is 170 degrees.
Continue a little longer until blubber on outside starts to pull away from ham.
Now remove the ham from the pan and place in a second large pan. Take a knife and cut
away the fat and skin, leaving only a small amount of the original fat clinging to the ham.
Place the ham now in another baking dish that is much smaller and deeper. Pour juices from
first pan into the pan with the ham and let cook 30 minutes. Remove, ham from pan and pour
juice into sauce pan and cook down. Return ham to small pan and put back in oven on 300.
Now take soup spoon and pour boiled down glaze over ham. 3 to 4 spoon fulls and then close
oven door for 5 minutes. Continue this until all of the glaze is gone from the sauce pan. Now in
5 minute intervals spoon 5 spoon fulls of juice from the ham baking dish over the top. Do this
3 times and then remove ham from oven to rest un covered on oven top for 1 hour, periodically
spooning juice over the top. .................................................. .............................................

.....sounds very good, SpeakerLust....I absolutely love ham that doesn't taste salty....I always get a Petit Jean ham....it's a little higher, but multiple times better tasting than others found locally....I get the ones that come fully cooked....you can cut all the ham meat off the bone, freeze most of it using air-tight thick Gladwrap, and have wonderful ham sandwiches and skillet-warmed breakfast ham to go with eggs for awhile.....

Cheez , I,m sick of seeing Ham with pineapple,, I know its tradtional but lets start thinking out of the box,,I use peaches,, I have also used Pears, Necterines, Apples, Oranges, Mangos,Papaya,etc,,I,m sure you proffessional kitchen people can chime in here also,,( of course it,s only my opinion I could be wrong)
