I currently run a CDX-1110u and a Carver 490 cd player in my set up. Would a 5000 offer better sound quality than my current ones?

Build quality wise the 5000 is quite a step up from the 1110 and that is saying a lot since the 1110 is built quite well. Mark B. is the only one I know that owns both. I'm sure he will chime in.

This I think is a tough one, as Eric C says Mark B is one of the few who have both so he can give the A/B test.
But I do dear to say the CDX-5000 is the better one, maybe only by a small margin (really small) but still.
This comes back to the fact that the sound from a CD-P is made by the 3 main components; Transport, DAC and analogue stage. Here the CDX-5000 is better of with the transport and analogue part. And as being the "normal" version of the CDX-10000 the build quality is only seen better in the limited edition 10000.
For the 1110 speaks the development in the DAC, it is slightly better with an S/N of 118dB (3dB better than the 5000) but the small improvements I do not believe make it up for the rest.

I haven't done a comparison between the CDX-5000 and any of my CDX-1xxx series players, but I suspect that the CDX-5000 would be fractionally better due to improved shielding, better transformers, and much more robust construction. However, I don't think it would be a significant difference. The CDX-1xxx series machines sound wonderful.
If I didn't have a CDX-5000 already I'd definitely want to get one.
