Who is a good go to guy to properly set up a cartridge on my tonearm? I am considering the Denon DL-110 which is supposedly fickle to setup and get right. Looking for someone who does setup and repair. Seattle area and north of Seattle preferred.

I don't know if the Audio Connection is a Denon dealer. I know they carry Grado (I just bought a Grado Blue from him a couple days ago), Rega, and Sumiko; possibly others. John Zimmerman is a great guy to work with, and turntables are a specialty of his (I've also gotten dozens of great used records from his store).

I know you said you're looking for a setup and repair facility rather than a dealer, but if John doesn't have the particular cartridge you're looking for, he may still be happy to do the setup work; if not, he would be a great resource for a recommendation on a qualified technician.
