Saturday night upon going to the grocery store for Jambalaya makings as I hosted the finale "Survivor". Everyone brings a pot......So the meat guy points out a xmas cut........OMG. 23 pound fresh bone in PORK baby........so on I go and smoked this sucker for dinner that night.......my guest were speachless as the jammed their mouths..........PORK fat rules too ! The skin tasted like bacon, then that tender meat....................Thanks to P&S ! What a great product !

Hawaiian BBQ sause to die for.........
Smoked for 6 hours at 200 degrees on a custom built Pitts and Spitts smoker.......... :banana: :banana: :banana: :smoke: :smoke: :smoke:

Bacon, you say? I go to a russian deli for my bacon. Hickory smoked, center cut, just enough fat to keep it sticking to the cast-iron frying pan and custom cut for me off the slab at 1/8 of an inch. Screw the crap you get in those vacuum-sealed packages where you get more fat than meat. THIS is what bacon is supposed to taste like! and it's worth every penny of the $4.99lb!

I agree. I buy my bacon from Trader Joe's. It is Apple smoked bacon with little fat. $4.99 a pound, however the package only comes with half a pound......

Looks like the purple bud Mendocino stuff I used to smoke up in French Gulch, CA. They grew the stuff on top of the gold mines...two tokes and...what was I saying?

Ever try an Apple chip smoked turkey????
I have one of those Little Chief smokers so the largest Turkey i can get in it is about 11-12 lbs. Hangin vertical.
What I do is first wash the bird it has to be fully defrosted. dry the skin very well then put in the oven at 350 degrees for about 20 minutes to fully dry the skin. Then Rubb the skin with olive oil until it's almost dripping. I then hang it in the smoker and burn two pans of store bought apple chips. Takes about 3 hours. Then another good rub down with olive oil and back in the oven to be cooked as recomemned.
The gentle smoky flavor will reach all the way to the breast bone without the least bit of drying.
We will do one this way and one normal when we have a holiday party and the smoker always disappears first. WAY first..

I do put apple juice in the bottom of my pit. The secret is for the first 30 min. smoke your meat with you choice of wood. Then use lump coal for the remainder to avoid bitterness of too much wood influence. Same goes for the juice you pick (OJ, Wine, Apple juice, beer etc...) for the first run, then replace with plain water. Good baste is plain beer. Shake the bottle and spray on meat......yum yum.....
