I don't often share my cajun secrets, but I guarantee that this may change Tim's outlook on Brussels Sprouts.....
Here ya go:
Only use FRESH Brussels sprouts. Cut them each in half. Rinse well. Set aside. Slice shallots paper thin (do not chop or mince) and set aside. Chop up some good smoked bacon one inch by one inch. Put in pot and brown bacon. Once it is all but done, remove it to a paper towel. Add your sliced shallots and caramelize in the bacon love juice. Season with red cayenne pepper (don’t be shy either as this is what makes them good), salt and black pepper, you can substitute with Tony’s but go easy as the chicken stock, bacon have salt in them. Stir well. Add your BS and stir well again and simmer for two min. Then add some good chicken stock (Minors recommended, Costco sells it as it is the BEST). Add the remaining bacon pieces stir and bring to a quick boil, then lower heat to low for 10-12 min and look out………talk about good ya sha………
BS (2 lbs. fresh)
Shallots: 3-4 (ONLY USE SHALLOTS TOO)
Bacon: 1 lbs chopped (Luthers smoked bacon from Virginia recommended)
Minor chicken stock: 2 cups max.
Cayenne pepper: 1 teaspoon
Salt & Black pepper: play it by ear… :yes: :yes: :thmbsp: :banana: :smoke:
