OK, I've removed the .177 cal pellets and aged the birds for just over a week now.
My question- can I just substitute pigeon for chicken and follow my same recipe as for chicken pot pie? Any concerns doing this?
Was going to share this with toze, but he is sooo sensitive he left Pittsburgh before I had enough.
Plus I had to wait for the bruhaha to die down so I could retrieve the birds.

Never tried it with pigeon, but I can tell you it's great with squirrel! And if you don't want to have to find all the buckshot pellets, try just clipping them with the front fender - if you get them with a tire, it takes too many to make a whole pie.

The herb to add to pigeon is sage. It makes them taste just like quail. Aging the bird important. Wrap it cheescloth and keep it under your porch. Once aged, it's great with cashew nuts too.

Hmmmm?!? Good question! Probably the same thing all other city pigeons eat. Whatever comes from the hand of the old lady sitting on the park bench who feeds them. Have to do some research on what she eats?!? Last I heard it was cat and dog food.... :scratch2:
