I have a Denon AVR 3300 that does 5 channel stereo and it does exactly what you are stating above. I use it in 5 channel mode when I am doing miscellaneous stuff around the house. When doing any serious listening to records or digital music, I always have it in 2 channel stereo.

I have been using one in my office to drive Minimus 7's for about a year and have good luck with it.
