I have a recently acquired 2000x I am adding to my collection. I bought from and Air Force vet who bought it new. Sticker on the side says EP 117V. The voltage selector is set for 117V. He Said he was using it up until a year ago. Should I change this to 110V?

Big. Check the "X" again. Mine has capability for 127V. The adjustments are on the side of the transformer. There should be a RED sticker (it may have fallen off. (See below). Follow instructions to set it to 127V. You don't want your line voltage to be higher than the voltage the transformer winding is rated for. It's a minor point now, but setting for 127 allows the extra windings in the transformer to come on line and puts less stress on the unit. I would set it for 127 if your wall voltage is higher than 117 and forget about it. And enjoy a unit that is less stressed and cooler.
