Bean Pot Chili
I use a ceramic bean pot but this works well in a dutch oven
if you plan to use beans
Day before soak a cup or dry red or kidney overnight. Drain and rinse beans and boil the for 5-10 minutes, Drain the beans again.
Ingredients
Beans (optional)
2 lbs stew beef
1/2 lb pork sausage broken up into chunks
1 onion chopped
1 green pepper chopped
3 stalks celery chopped
2 TBSP minced garlic
1/4 cup chili powder
2 TBSP Paprika
2 tsp Cocoa powder (don't skip this)
1 TBSP oregano
2 tsp salt
1 tsp ground cumin
1/2 tsp ground cayenne pepper (or more to taste)
1 large can of diced tomatoes
2 TBSP Tomato Paste
1/2 cup water
2 TBSP Cornmeal
water to make cornmeal paste
Preparation
Add all ingredients except corn meal to bean pot or dutch oven ans stir. Set oven to 300 degree (F). Place in oven and cook for 4-5 hours, Half hour before serving add water to corn meal to make a paste and add to chili and stir. If you are not using beans you can crush up the chili before serving.
